How to Make Perfect Pancakes
A few simple steps for flapjack perfection
Yes, nothing hits the spot early in the morning like a tall stack of fluffy flapjacks.
Simply pour some mix or other powdered ingredients into a mixing bowl, add some milk and an egg, mix it all up, and you are ready to start grilling, right?
Well, yes and no, according to the National Federation of Agricultural Cooperative Associations of the Japan Agricultural Cooperative Group (mercifully abbreviated in Japanese to Zen-Noh).
Zen-Noh says there is nothing wrong with the choice of ingredients we present above, but you need to get the sequence right to get pancakes that are light and fluffy.
Zen-Noh says you should stir the egg and milk first, and then add your pancake mix or other powdered ingredients, gently stirring everything together.
Though this may sound like over-thinking a rather simple process, it makes perfect sense if you think about it. The air inside pancake batter makes it light and fluffy, and overmixing can cause too much air to escape. The same is true when handling cake, cupcake and other batter, and even sourdough.
